Soupe de Cresson - Watercress Soup



This is a very fresh and comforting soup to have on a cold winter's day. It brings the promise of the freshness of spring. And very simple to make...but just be aware...it is a diruetic. Which may be a good thing to freshen us inside and clean out the plumbing. To make you will need:

3 bunches of watercress triple washed and most of the stems cut off
NOTE:I like the hydroponic type as it is freshest
1 medium potato washed, peeled and cut into cubes
1 pat of butter
water
salt and pepper to taste

Melt butter in a large pot. Add watercress and cook in the butter until it wilts down. Cover with water. Add the potato, salt and pepper. Cook over medium heat until potatoes are done. Whiz into a puree with a hand blender and add more water until you get the consistency you want. Cook over medium heat for about 10 more minutes.

Serve with croutons and enjoy!
